Spring Chicken with Ramps, Peas, and Asparagus. If you have never tried ramps before and cyou have to give this a try. It’s probably my all time favorite spring time dish. Ramps are a garlicky tasting wild leek that are only available for a few weeks in the northeast around the end of April. They are a very slow growing plant in the Appalachian Mountains and can be scarce and hard to find. If you spot them at your grocery store, grab them!
